5 medium potatos
1 cup canned Coconut milk mixed with 1/2 cup water or 1 cup fresh Coconut milk
1/3 cup peeled and diced tomato
1/2 tsp salt
Boil peeled and quartered potatos, in salted water, for 10 minutes (they should still be slightly undercooked).
Add coconut milk, tomatoes and salt and bring to a boil.
Cover and let simmer on low for 15 minutes.
Potatos are ready to serve.
Top with Cabbage or Okra in Tomato Sauce.
