Ingredients:
2 bunches Swiss Chard (washed and cut into 1/4″ thick strips
2 cups Coconut milk
1/4 cup red onion thinly sliced
1/4 cup peeled and thinly sliced Roma tomato
1/4 tsp salt
pepper to taste
Recipe:
Boil Swiss Chard for 20 minutes. Drain and Strain the Swiss Chard (drink the run-off water for a nice refreshing chard tea…you can feel the vitamins).
Add coconut milk, onion, tomato, salt and pepper and bring to a boil for 5 min.
Add drained swiss chard and turn down heat to medium. Stir constantly (I have noticed that the chard likes to stick to the bottom and burn while the coconut sits on top)
As the coconut begins to lessen turn the stove down to low. Stir constantly.
Allow the coconut milk to “dry”. (Approx. 45 minutes)
Serve over rice, with chapati, on french bread or alongside boiled green cooking plantains.
