3 cups sorted fresh Red Kidney beans
1 1/2 cup coconut milk (fresh or canned)
1 tsp salt
Sort beans keeping and eye out for stones, dirt and “ugly lookin” beans. Rinse in cool water to make sure you don’t get gritty beans.
Boil beans for 1 and a 1/2 hours. Be sure to add water when it gets low (every 30 minutes). The water the beans are boiled in is the important ingredient for this recipe. Beans are ready when they are soft and the water is just covering the beans.
Add salt and pepper.
Add coconut milk.
Let boil for 20 minutes (or until sauce is thickened and covering the beans).
2 hours (worth every minute)
